For 6 persons.
1 kg fish meat, 8 pieces of garlic, 1 cup sherry vinegar, paprika, cumin, 1 glass dry sherry wine, flour and olive oil.

Clean the fish, cut into medium size pieces, and into a bowl. Cover with crushed garlic, vinegar, paprika and cumin, add the glass of sherry and a little water. Let stand for 4 to 12 hours until the fish has absorbed the flavors. Flour and fry in olive oil.
