Truffle Vinaigrette

Ingredients:
20g. black truffle
50g. shallots
Chopped scallion
8 tablespoons “CAPIRETE” Sherry Vinegar
5 tablespoons “CAPIRETE” Extra Virgin Olive Oil
100g. fresh white cheese
Pepper
Salt

Preparation:
Blend all of the ingredients of the vinaigrette together, except for the white cheese, to be added just moments before serving. Salt and pepper to taste.

Ideal for: This vinaigrette is the perfect match alongside any kind of roasted or grilled vegetables such as aubergines, courgettes, bell peppers, new potatoes or tender leeks.
